#20 Quesadillas

Quesadillas with CAULIPOWER Cauliflower Tortillas

 

INGREDIENTS: Caulipower Cauliflower

  • Eggs, scrambled
  • Your favorite breakfast meat, cooked
  • Shredded Cheddar Cheese
  • Salt & Pepper, to taste

 

DIRECTIONS:

  1. Scramble and cook the eggs.
  1. Mix in the cooked meat to the eggs.
  1. Place a cauliflower tortilla in a separate skillet over medium-high heat.
  1. Top the tortilla with as much (or as little cheese) as you’d like.
  1. Add the scrambled egg & meat mixture to the top of the cheese.
  1. Cover with more cheese and top with another tortilla.
  1. After about a minute (when the cheese is melted), flip the quesadilla.
  1. Serve and enjoy!

    That looks really good! I also like those tortillas made from egg whites. I do those during my low carb weeks, of which I tend to have a couple per year just to snatch my stomach back flat when I've let myself go a little too much.

    Never heard of the cauliflower tortillas. Where would I even purchase them. Am assuming there's a recipe somewhere of you want to make your own.

      63- I found it at the store who sale a lot of organic and healthy food. But I believe any kind will work too.
