The black turtle bean is a small variety of the common bean (Phaseolus vulgaris). It is called "turtle" because of its hard shiny skin. It is a popular ingredient in Mexican, Brazilian, and other Latin American cuisines. It is also used in India and in a Thai dessert made of glutinous rice, black beans and coconut milk.
