My mom decided to do pancakes this morning. They are deliciously light and fluffy. She tops them with greek yogurt and lemon juice. I stick to the traditional butter and powdered sugar. I don't eat breakfast so this is actually my lunch.Pancakes

    We use the aunt Jemima (cant remember the new name) mix but then add a little extra baking powder and a tablespoon or two of lemon juice. The lemon really gives them a lift.
