Soybeans (Glycine max) is a legume native to East Asia and is used in the traditional cuisine there. The raw plant is toxic so it must be cooked, fermented, or otherwise processed to remove trypsan inhibitors. Of all the legumes commonly eaten by humans, soy has the most protein, and it is a complete protein, which is why it makes an excellent base for vegan diets.
