What's for dinner?

 

 

This is one of mine and my kids favorite fast fixes - taco pie (minus the veggies. It's like a lasagna but made with flour tortillas and a dollop of sour cream on top.

    Either garlic herb zoodles, California mix veggies with a butter sliver with garlic & seasoned salt, or half a bag of mango Lemonade salad with tomato and spinach. I'll decide when I get there. My dinners are skimpy so I can have chocolate and Starbucks lol

    Taco seasoning or Montreal steak seasogoes. I also use a bit of spaghetti sauce but you can use taco sauce as well. For cheese, i use either the Mexican Fiesta mix or slices of provolone cheese. You can use any seasoning you want.
    
    Layer soft tortilla shells with seasoned ground beef (chicken, pork, or even your vegetarian/ vegan preference), add a layer of cheese or alternatives, then another shell (just like as if making a lasagna). It can be as many layers as you want. Mine is either 2 or 3. After you have your top tortilla, any juices from your meat, pour on top. Not only will it flavor it, will also prevent the top from burning. Place in a 350° oven for 15-20 minutes, with the top slightly brown and the cheese will be nice and goey. Sour cream on top is optional.
