So I have a watch that doesn't connect to this app and it's telling me I have over 26,000 steps today while the app is telling me I only have 2,600 I'm calling BS on this app

Well yeah, because your watch is always on you and tracking your steps but this app is only on your phone so it only tracks your steps when your phone is on you.

I had my phone in my pocket all day so it should have the same amount of steps on it as my watch
